Healthy Habit: Meal Prep

I love food…like seriously love food, and I am always looking for ways to save myself time (and money!) while still eating well. This is where meal prep enters the picture, specifically lunch meal prep.  I prepare all of our lunches over the weekend and have been doing so for several years. It gives me better control over my weekday food choices, but it saves me a ton of time during the week when I don’t have to pull together lunches each day. I also love the knowing exactly what I am eating plus I like to think it saves me money by not going out to eat each day.

While this all sounds great, meal prep does require a little planning.  You need to plan what you want to eat, make sure you have everything you need and then carve out a little time on a weekend day to do the actual prep. After several years of this, I have mine down to a system and it takes no more than an hour each week and in many cases less depending on the recipe of the week. Aside from planning, my other tip for successful meal planning is making sure that you are preparing food that you will actually want to eat during the week. Sure, baked chicken might sound good on a Sunday when you are feeling ambitious, but by lunch on Monday you arent looking forward to it. Make something that you will actually look forward too!

To get you started, I have included some of my favorite meal prep lunch options. I’ve linked to most of them that I have found via Pinterest. I don’t always follow all of these recipes exactly as I make modifications to fit my preferences, but these will give you a good start.
